  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons gochujang
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 4 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1 medium carrot, julienned
  • 2 tablespoons mayonnaise
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 brioche sandwich buns
  • Butter for toasting buns

Instructions

  1. Marinate the chicken: Whisk together soy sauce, brown sugar, honey, gochujang, garlic, ginger, rice vinegar, and sesame oil. Coat chicken thighs and marinate for at least 15 minutes.
  2. Prepare the slaw: Mix shredded cabbages, carrot, mayonnaise, rice vinegar, sugar, salt, and pepper in a bowl.
  3. Cook the chicken: Heat a skillet over medium-high heat and cook marinated chicken for about 57 minutes per side until fully cooked. Let rest before slicing.
  4. Toast the buns: Butter and toast each side of the sandwich buns in the skillet.
  5. Assemble: Place sliced chicken on toasted buns and top with cabbage slaw.
