1/2 cup low-sodium soy sauce
3 tablespoons brown sugar
1 tablespoon honey
2 tablespoons gochujang
1 tablespoon rice vinegar
1 tablespoon sesame oil
4 garlic cloves, minced
1 teaspoon grated fresh ginger
3 cups shredded green cabbage
1 cup shredded red cabbage
1 medium carrot, julienned
2 tablespoons mayonnaise
1 tablespoon rice vinegar
1 teaspoon sugar
Salt and black pepper to taste
4 brioche sandwich buns
Butter for toasting buns
Instructions
Marinate the chicken: Whisk together soy sauce, brown sugar, honey, gochujang, garlic, ginger, rice vinegar, and sesame oil. Coat chicken thighs and marinate for at least 15 minutes.
