  • 1 tablespoon fresh lime juice

  • 1 cup whole or 2% milk
  • 2 cups powdered sugar
  • 2 tablespoons milk, to consistency
  • 1 teaspoon lime zest

Instructions

  1. Preheat your oven to 350F. Grease and lightly flour two 9×5-inch loaf pans.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream sugar and butter until light. Add lime juice, zest, then eggs one at a time; beat until combined.
  4. Gradually mix in dry ingredients alternately with milk until smooth.
  5. Pour batter into pans and bake for 55 to 60 minutes or until a toothpick comes out clean. Cool for 20 minutes before transferring to a wire rack to cool completely.
  6. For the glaze, whisk powdered sugar with milk and zest until smooth; drizzle over cooled cakes.
