  • 1 box yellow cake mix (15.25 oz)
  • 1 cup water
  • cup vegetable oil
  • 3 large eggs
  • 1 package lime-flavored gelatin mix (3 oz)
  • 1 cup key lime juice (bottled or fresh)
  • cup white sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1 tablespoon lime zest
  • Green food coloring (optional)
  • 1 container whipped topping (8 oz, thawed)
  • Extra lime zest (for garnish)

Instructions

  1. Preheat oven to 350F (175C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix the yellow cake mix, water, vegetable oil, and eggs until smooth. Pour into the prepared dish and bake for 25-30 minutes or until a toothpick comes out clean.
  3. Cool the cake for 10 minutes, then poke holes all over with a wooden spoon handle.
  4. In a saucepan over medium heat, combine gelatin mix, key lime juice, sugar, and cornstarch; stir until thickened. Remove from heat and add butter and lime zest.
  5. Pour the lime filling over the cake while warm and let it cool at room temperature before refrigerating for at least 2 hours.
  6. Spread whipped topping over chilled cake and garnish with extra lime zest.
