Keto Chicken Parmesan Zucchini Boats are a delicious and satisfying low-carb twist on the classic chicken parmesan. These tasty zucchini boats are stuffed with a flavorful mixture of ground chicken and marinara sauce, topped with generous amounts of gooey mozzarella and parmesan cheese. Perfect for busy weeknights or meal prep, this dish is not only easy to make but also a hit with the whole family.

  • 1 lb ground chicken
  • 2 cups no-sugar-added marinara sauce
  • 3 large zucchinis
  • 3 cups shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Preheat the oven to 375F (190C).
  2. Halve the zucchinis lengthwise and scoop out the centers to create boat shapes. Lightly salt them and set aside.
  3. In a skillet over medium heat, cook the ground chicken seasoned with salt, pepper, and garlic powder until browned. Stir in the marinara sauce and simmer for 57 minutes.
  4. Arrange the zucchini boats in a baking dish and fill each with the chicken mixture.
  5. Top with mozzarella and parmesan cheese.
  6. Bake for 2025 minutes until the cheese is bubbly and golden brown. For a crispy top, broil on high for an additional 23 minutes.
  7. Garnish with chopped parsley if desired, serve warm, and enjoy!
