  • 1 1/2 cups raw unsalted walnuts
  • 1/2 cup pumpkin seeds
  • 6 cups mixed salad greens
  • 2 cups frise leaves
  • 12 diced apples or pears
  • 2 sliced avocados
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese (blue, feta, or goat)
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • 1/4 teaspoon chipotle powder
  • Salt and black pepper to taste
  • Chili flakes

Instructions

  1. Preheat the oven to 350F (175C). Spread walnuts and pumpkin seeds on a baking sheet and roast for 10-15 minutes.
  2. In a bowl, whisk together olive oil, vinegar, mustard, honey, fig jam, orange zest and juice, chipotle powder, salt, and pepper until smooth.
  3. In a large bowl, combine greens and frise; add diced fruits and nuts along with crumbled cheese.
  4. Drizzle dressing over the salad and toss gently until everything is evenly coated.
  5. Serve immediately or chill before serving.
