  • 4 medium zucchini
  • 8 oz cream cheese (softened)
  • 1 cup shredded cheddar cheese (fat-free)
  • 6 strips turkey bacon (cooked, crumbled)
  • 2 jalapeos (minced)
  • 2 garlic cloves (minced)
  • Olive oil
  • Kosher salt

Instructions

  1. Preheat oven to 375F (190C). Brush halved zucchinis with olive oil and sprinkle with salt. Arrange cut side up on a baking sheet and bake for 10 minutes.
  2. Remove from oven and scoop out the center of each zucchini half to create boats.
  3. In a mixing bowl, blend softened cream cheese until fluffy. Squeeze excess moisture from scooped zucchini flesh and mix into the cream cheese.
  4. Stir in cheddar cheese, turkey bacon, jalapeos, and garlic until combined.
  5. Fill each zucchini boat with the mixture. Bake for an additional 15 minutes until golden.
