  • 6 medium Russet potatoes
  • Olive oil
  • Salt and pepper
  • 8 ounces cream cheese (softened)
  • 1/2 cup grated cheddar cheese
  • 1/4 cup sour cream
  • 1 large jalapeno (seeded and minced)
  • 1 clove garlic (minced)
  • 3 slices cooked bacon (crumbled)

Instructions

  1. Preheat your oven to 400F (200C).
  2. Wash and dry the potatoes; prick them several times with a fork.
  3. Rub each potato with olive oil and sprinkle with salt and pepper. Bake for about 60 minutes until tender.
  4. While baking, combine cream cheese, cheddar, sour cream, jalapeno, garlic, and bacon in a mixing bowl.
  5. Once potatoes are baked and slightly cooled, cut in half lengthwise and scoop out some flesh.
  6. Fill each skin generously with the mixture and bake again for 15-20 minutes until golden brown.
