  • 4 garlic cloves minced
  • 1/2 onion finely diced
  • 12 jalapeno peppers seeded and finely diced
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 3/4 cup shredded pepper jack cheese
  • 1/2 cup chopped fresh cilantro
  • vegetable or olive oil
  • 8 slices of cheese optional (I use American or white cheddar)
  • 8 hamburger buns
  • 1 head of roasted garlic
  • 1/3 cup mayonnaise
  • salt and pepper to taste
  • 2 large avocados
  • Juice of 1 lime
  • 2 tablespoons cilantro finely chopped

Instructions

  1. Prepare roasted garlic mayo by mixing roasted garlic with mayonnaise and seasoning to taste. Refrigerate until ready.
  2. Preheat your grill to medium-high.
  3. In a mixing bowl, combine ground chicken, minced garlic, diced onion, jalapenos, paprika, salt, pepper, shredded cheese, and cilantro.
  4. Form the mixture into 8 patties without overworking the meat.
  5. Grill patties for about 8 minutes per side or until they reach an internal temperature of 165F. Add cheese during the last minute if desired.
  6. Serve on toasted buns with your choice of toppings.
