  • 8 Tbsp butter (divided use)
  • 1 cups yellow cornmeal
  • 1 cup all-purpose flour
  • cup granulated sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1 tsp baking soda
  • tsp granulated garlic
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1 cup buttermilk
  • 2 large eggs
  • 2 small-medium jalapenos (seeded and diced)
  • cup chopped green onions

Instructions

  1. Preheat your oven to 375F. Melt 1 Tbsp of butter in a cast iron skillet while the oven heats.
  2. In a bowl, whisk together cornmeal, flour, sugar, baking powder, salt, baking soda, and garlic.
  3. In another bowl, mix buttermilk, melted butter (7 Tbsp), and eggs until combined.
  4. Add the wet mixture to the dry ingredients and stir gently until moistened.
  5. Fold in cheddar cheese, diced jalapenos, and green onions.
  6. Remove the skillet from the oven and coat it with melted butter before pouring in the batter. Sprinkle with remaining cheese.
  7. Bake for 2530 minutes or until golden brown; test with a toothpick to check doneness.
