  • 2 cups sugar
  • 3 large eggs
  • 3/4 cup canola oil
  • 1/2 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon salt
  • 1 can (8 ounces) crushed pineapple (drained)
  • 2 cups julienned carrots
  • 1 cup shredded coconut (unsweetened)
  • 1 cup pecan pieces
  • 8 ounces cream cheese (room temperature)
  • 6 ounces unsalted butter (room temperature)
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 325F (163C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the flour, baking soda, cinnamon, sugar, and salt.
  3. In another bowl, whisk together the butter, eggs, canola oil, buttermilk, and vanilla until smooth.
  4. Combine the wet and dry ingredients. Fold in the pineapple, carrots, coconut, and pecans gently.
  5. Pour the batter into the prepared baking dish and bake for 4050 minutes or until a toothpick comes out clean.
  6. While baking, prepare the buttermilk syrup by heating remaining buttermilk with sugar until dissolved.
  7. Poke holes in the baked cake and pour the syrup over it immediately.
  8. Cool for at least two hours before frosting with cream cheese frosting made by mixing cream cheese, butter, and powdered sugar until smooth.
