  • 3 tbsp extra virgin olive oil

  • 1/3 cup sun-dried tomatoes

  • 1 cup spinach
  • 46 oz mozzarella cheese
  • Egg yolk
  • Bread crumbs

Instructions

  1. Prepare the flank steak by removing it from the fridge an hour before cooking and pound it evenly between parchment paper.
  2. Preheat your oven to 425°F (220°C).
  3. Mix seasoning ingredients together and rub on both sides of the steak.
  4. Combine stuffing ingredients in a bowl and mix well.
  5. Place stuffing in the center of the steak, roll tightly, and secure with cooking twine.
  6. Heat olive oil in a cast iron pan, sear the rolled steak on all sides, then bake for 25 minutes.
  7. Broil asparagus tossed in olive oil alongside the steak for an additional 10 minutes.
  8. Allow the meat to rest before slicing and serving with roasted asparagus.
