  • ½ cup dry white wine (or chicken broth)
  • 1 small yellow onion (diced)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 (15 oz) can undrained diced tomatoes
  • ½ cup grated Parmesan cheese
  • 1½ cups mozzarella cheese
  • ¾ cup beef broth
  • ¼ cup half and half
  • ½ lb cavatappi pasta (or penne)

Instructions

  1. Prepare the oven at 350°F if melting cheese on top.
  2. In a measuring cup, combine sauce ingredients and set aside.
  3. Heat a large skillet over medium-high; cook crumbled sausage for about three minutes before adding onions. Cook until softened.
  4. Boil water for pasta; add salt once boiling.
  5. Deglaze the skillet with wine, reducing by half.
  6. Add butter, garlic, and flour; stir until fragrant.
  7. Gradually add the prepared sauce mixture while stirring continuously.
  8. Stir in diced tomatoes; bring to boil then simmer with sausage mixture.
  9. Cook pasta al dente; drain and mix into sauce along with cheeses until melted.
  10. Top with remaining mozzarella; melt on low heat or in the oven.
