  • 8 oz jar oil-packed sun-dried tomatoes
  • 1 large onion
  • 3 large carrots
  • 2 stalks celery
  • 5 cloves garlic
  • 5 cups chicken broth
  • 1 pound shelf-stable gnocchi
  • 2 cups cooked chicken (shredded)
  • 34 oz baby spinach
  • Grated parmesan cheese for serving

Instructions

  1. In a large pot or Dutch oven, heat sun-dried tomato oil over medium heat. Add diced onion, carrots, and celery; saut for 5 minutes until softened.
  2. Stir in sun-dried tomatoes and minced garlic along with seasonings (Italian seasoning, smoked paprika, onion powder, salt, pepper) and saut for an additional minute.
  3. Mix in tomato paste, chicken base, and flour; cook while stirring for about 1 minute.
  4. Pour in chicken broth while scraping the bottom of the pot to incorporate flavors. Bring to a simmer and partially cover.
  5. Reduce heat to low and simmer for 15 minutes.
  6. Add shredded chicken, spinach, evaporated milk, and gnocchi; cook on medium-low for another 5-10 minutes until heated through.
  7. Serve topped with grated parmesan cheese.
