  • 1 teaspoon (5 g) baking soda
  • teaspoon (2.5 g) salt
  • 2 teaspoons (5 g) ground cinnamon
  • teaspoon (1 g) ground nutmeg
  • cup (170 g) unsalted butter, melted and slightly cooled
  • cup (150 g) packed brown sugar
  • cup (100 g) granulated sugar
  • cup (120 g) pure pumpkin puree
  • cup (60 ml) pure maple syrup
  • 1 teaspoon (5 ml) vanilla extract
  • 1 large egg yolk

Instructions

  1. Whisk together the flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  2. In another bowl, mix melted butter with brown sugar and granulated sugar until smooth. Add pumpkin puree, maple syrup, vanilla extract, and egg yolk; whisk until combined.
  3. Gradually stir the dry ingredients into the wet mixture until just combined.
  4. Cover dough with plastic wrap and chill for 30 minutes in the refrigerator.
  5. Preheat oven to 350F (175C) and line baking sheets with parchment paper.
  6. Scoop dough onto prepared baking sheets about 2 inches apart. Bake for 1012 minutes until set.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
