  • 8 oz spaghetti or fettuccine
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tbsp freshly squeezed lemon juice
  • 1 cup grated Parmesan cheese
  • cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Reserve cup of pasta water before draining.
  2. In a large skillet over medium heat, heat the olive oil. Season shrimp with salt and pepper and cook for about 3 minutes on each side until pink and opaque. Remove from skillet and set aside.
  3. Lower the heat and add minced garlic to the same skillet, sauting for about 1 minute until fragrant. Add heavy cream and lemon juice; bring to a gentle simmer.
  4. Stir in grated Parmesan cheese and chopped basil until melted and well combined. Adjust sauce consistency with reserved pasta water if needed.
  5. Return cooked shrimp to the skillet along with drained pasta, tossing everything together until well coated in sauce.
  6. Serve hot, drizzling with extra sauce if desired.
