  • 3 cups boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 2 sheets puff pastry (thawed)
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400F (200C) and prepare a baking dish with nonstick spray.
  2. In a skillet, heat olive oil over medium heat and cook chicken pieces until golden brown (about 7-10 minutes). Remove from heat.
  3. Stir in fresh spinach until wilted, then add crumbled feta and oregano. Allow to cool slightly.
  4. Roll out one sheet of puff pastry into the baking dish. Fill it with the chicken mixture and cover with another pastry sheet, sealing edges with a fork.
  5. Cut slits in the top crust for steam to escape and bake for 25-30 minutes until golden brown.
