  • 2 cups ginger snap cookies, crushed
  • cup unsalted butter, melted
  • cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • tsp ground nutmeg

Instructions

  1. Preheat oven to 350F (175C). In a bowl, combine crushed ginger snaps, melted butter, and sugar. Press mixture into the bottom of a springform pan.
  2. Beat cream cheese until smooth; gradually add sour cream and mix well. Add eggs one at a time, blending gently after each addition.
  3. Stir in ginger, cinnamon, and nutmeg until fully combined.
  4. Pour filling over the crust and smooth the top.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Cool in the oven for an hour with the door ajar.
  6. Refrigerate for at least four hours before serving.
