  • 1 cup jasmine rice
  • 2 cups water

  • 2 tbsp low-sodium soy sauce

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear. In a saucepan, combine rinsed rice, coconut milk, and water. Bring to a boil.
  2. Heat oil in a skillet over medium-high heat. Season chicken with salt and pepper. Cook for 5-6 minutes per side until golden brown and cooked through.
  3. Remove chicken from the skillet; saut mixed vegetables in the same skillet for 4-5 minutes until tender.
  4. Slice the chicken and return it to the skillet with vegetables. Add lime juice and soy sauce; stir until combined.
  5. Fluff the cooked rice and serve topped with chicken and vegetable mixture.
