  • 1 cups graham cracker crumbs
  • cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 3 ripe bananas (sliced)
  • 1 cup whipped cream (for topping)

Instructions

  1. Preheat oven to 350F (175C). Combine graham cracker crumbs and melted butter in a bowl, then press firmly into the bottom of a springform pan to form the crust.
  2. In another bowl, beat cream cheese and sugar until smooth. Mix in vanilla, then add eggs one at a time, blending until fully combined.
  3. Spread half of the cheesecake mixture over the crust, layer sliced bananas evenly on top, then add remaining cheesecake filling.
  4. Bake for 45-50 minutes until set but slightly jiggly in the center. Cool at room temperature before refrigerating for at least four hours or overnight.
  5. Before serving, remove from the pan and top with whipped cream.
