  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 375F (190C).
  2. In a skillet over medium heat, add olive oil and saut minced garlic for about 1 minute until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes.
  3. In a baking dish, place the salmon fillets skin-side down. Season with salt, pepper, and oregano.
