  • 12 tortillas (flour or corn)
  • 3 russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 pound deli corned beef (thinly sliced)
  • 1 cup chopped cabbage
  • ½ cup Thousand Island dressing
  • ½ sweet onion (sliced)
  • Oil (for frying)
  • Salt and pepper to taste

Instructions

  1. Peel and cube the russet potatoes. Boil in salted water for about 10 minutes until tender.
  2. Remove potatoes and cook chopped cabbage and sliced onions in the same water for an additional 5 minutes.
  3. Mash the cooked potatoes until smooth, then mix in shredded cheddar cheese.
  4. Heat a skillet over medium heat. Spread Thousand Island dressing on each tortilla, add mashed potato filling, top with corned beef, cabbage, and onions, then fold the tortillas in half.
  5. Fry tacos in hot oil for about 30 seconds on each side until golden brown.
