  • 3 large russet potatoes
  • 3 large Yukon Gold potatoes
  • 7 tablespoons unsalted butter
  • cup heavy cream or whole milk
  • 1 medium onion
  • head green cabbage
  • 6 slices crispy cooked bacon
  • Kosher salt and fresh ground black pepper

Instructions

  1. Boil the potatoes: In a large saucepan, cover chunked potatoes with lightly salted water and bring to a boil. Simmer for 15-20 minutes until tender. Drain and return to pot. Add 4 tablespoons of butter and cream.
  2. Saut onions and cabbage: In a skillet, melt 2 tablespoons of butter over medium heat. Cook chopped onion until tender, then add chopped cabbage and cook until lightly browned.
  3. Combine: Mash the boiled potatoes until smooth, then stir in the sauted cabbage mixture and half the bacon. Season with salt and pepper. Transfer to a serving bowl, top with remaining bacon and pats of butter.
