  • 1 lb boneless, skinless chicken thighs
  • 1 cup plain full-fat Greek yogurt
  • 1 cup full-fat coconut milk
  • 4 tbsp garlic and ginger paste (equal parts garlic and ginger)
  • 2 large onions, chopped
  • 2 tbsp cooking oil
  • 2 tbsp korma spice mix (cumin, coriander, cardamom, cinnamon, turmeric)

Instructions

  1. Marinate the chicken by mixing it with yogurt, garlic-ginger paste, and half the korma spice mix in a large bowl. Cover and refrigerate for at least 30 minutes.
  2. Heat oil in a skillet over medium heat. Saut onions until golden brown (5-7 minutes).
  3. Add marinated chicken and cook for about 10 minutes until browned.
  4. Pour in coconut milk and remaining spices; gently simmer for 20-25 minutes until chicken is cooked through.
  5. Adjust sauce thickness as desired by simmering uncovered for a few extra minutes.
  6. Serve hot with steamed basmati rice or warm naan.
