  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 tsp espresso powder
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed graham crackers and melted butter; press into the bottom of a springform pan to form the crust.
  2. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing well.
  3. Stir in sour cream and espresso powder until fully combined.
  4. Pour the filling over the crust and smooth the top with a spatula.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly. Turn off the oven and let cheesecake cool inside for an hour.
  6. Chill in the refrigerator for at least four hours or overnight before serving.
