  • 2 large sweet potatoes
  • 1 cup fresh or frozen cranberries
  • 1 juicy apple, diced
  • 2 tablespoons butter
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 2 tablespoons maple syrup
  • Salt to taste

Instructions

  1. Preheat oven to 400F (200C).
  2. Pierce sweet potatoes with a fork and place on a baking sheet. Bake for 45-50 minutes until soft.
  3. Let cool slightly, then scoop out most flesh into a bowl.
  4. In a skillet, melt butter over medium heat. Add apple, cranberries, nutmeg, cinnamon, and salt; cook until tender (5-7 minutes).
  5. Stir in maple syrup and mix well.
  6. Combine half of the fruit mixture with the sweet potato flesh.
  7. Refill potato skins with the sweet potato mixture and top with remaining fruit filling.
  8. Bake for an additional 10-12 minutes until heated through.
