  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp grated orange zest
  • 1/4 cup freshly squeezed orange juice
  • 12 tbsp very cold butter (for crust)
  • 3 cups all-purpose flour (for crust)
  • Egg wash (1 egg beaten with 1 tablespoon water)

Instructions

  1. Prepare the pie crust by mixing flour, sugar, salt, butter, and shortening in a food processor until crumbly. Add ice water until the dough forms.
  2. Roll out half of the dough to fit your pie dish and refrigerate the other half.
  3. For the filling, combine sliced peaches, sugar, cornstarch, orange zest, orange juice, and butter in a saucepan and bring to a boil.
  4. Pour the peach mixture into the prepared crust, cover with the remaining crust or lattice top.
  5. Bake at 400F for about 45 minutes until golden brown and bubbly. Let cool before serving.
