  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (to taste)
  • 1 cup feta cheese, crumbled
  • Fresh parsley (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a medium mixing bowl, whisk together honey, olive oil, red wine vinegar, minced garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish. Pour marinade over the chicken ensuring it's well coated. Seal and refrigerate for 2 to 4 hours.
  3. Preheat the oven to 400F (200C).
  4. Remove chicken from marinade and place in a baking dish. Top each breast with crumbled feta.
  5. Bake for 25 to 30 minutes until chicken reaches an internal temperature of 165F (75C) and feta is golden.
  6. Let the chicken rest for 5 minutes before serving with garnished parsley and lemon wedges.
