  • 1 pound raw medium-sized shrimp (peeled and deveined)
  • 1 head butter lettuce (or 5 cups lettuce of choice)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (peeled and sliced)
  • 1/2 cup corn
  • 1/3 cup crumbled queso fresco
  • Cilantro for garnish
  • For the vinaigrette: olive oil, honey, lime zest, lime juice, chili powder, cumin, garlic powder, salt, and pepper

Instructions

  1. In a small bowl or jar, mix olive oil, honey, lime zest and juice, chili powder, cumin, garlic powder, salt, and pepper to create the vinaigrette.
  2. Marinate shrimp in 3 tablespoons of the vinaigrette for 15-30 minutes.
  3. Arrange lettuce on a platter; top with corn, tomatoes, avocado, and queso fresco.
  4. In a skillet over medium-high heat, cook marinated shrimp until opaque and curled (about 3-4 minutes).
  5. Combine cooked shrimp with salad ingredients; garnish with cilantro and drizzle with remaining vinaigrette.
