  • 1 pound boneless, skinless chicken thighs or breasts
  • 2 cups long-grain white rice
  • 1/4 cup honey
  • 1/4 cup fresh lime juice
  • 2 tablespoons soy sauce
  • 1 teaspoon lime zest
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Cook the rice in a medium pot with water until fluffy.
  2. Whisk together honey, lime juice, soy sauce, lime zest, garlic powder, onion powder, salt, and pepper to create the marinade.
  3. Marinate the chicken in half of the marinade for at least 15 minutes.
  4. Heat olive oil in a skillet over medium-high heat and cook the marinated chicken until browned and cooked through.
  5. Add corn and black beans to the skillet; heat until warmed.
  6. Slice the chicken and assemble the bowls by layering rice, chicken, corn-bean mixture, and diced avocado.
  7. Drizzle remaining marinade on top and garnish with cilantro.
