  • 1/4 cup unsalted butter
  • 1 cup light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup creamy peanut butter (for filling)
  • 2/3 cup powdered sugar (for filling)
  • 34 tablespoons heavy cream (for filling)
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350F and line a baking sheet with parchment paper.
  2. In a stand mixer, beat together peanut butter, butter, and brown sugar until fluffy. Add egg and vanilla; mix well.
  3. Combine dry ingredients (flour, cornstarch, baking soda, salt) in a separate bowl; gradually add to the wet mixture until just combined.
  4. Shape dough into oval discs and place on the baking sheet. Use a fork to create crosshatches on top.
  5. Bake for 9-10 minutes until edges are set but centers are soft. Cool completely.
  6. For the filling, mix remaining peanut butter with powdered sugar and cream until smooth. Pipe onto half of the cookies and sandwich with the other halves.
