Instructions

  1. Preheat the oven to 350F (175C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat softened butter, peanut butter, and brown sugar until light and fluffy.
  4. Add in the egg and vanilla; mix until combined.
  5. Gradually incorporate dry ingredients into the wet mixture.
  6. Roll tablespoon-sized dough balls in sugar and place on baking sheets.
  7. Bake for about 10 minutes or until edges are golden brown; cool on racks.
  8. For the filling, beat together softened ingredients until creamy and smooth.
  9. Once cooled, sandwich the filling between two cookies.
