  • 1 cup old-fashioned oats
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 10 tablespoons unsalted butter, melted
  • 3/4 cup light brown sugar, packed
  • 1 teaspoon pure vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 2 tablespoons sour cream (or plain yogurt)
  • 1 large egg yolk
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon finely grated lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and lightly spray it with nonstick spray.
  2. In one bowl, whisk together flour, oats, salt, and baking soda. In another bowl, mix melted butter, brown sugar, and vanilla until combined.
  3. Combine the wet and dry mixtures. Reserve 3/4 cup for topping, then press the rest into the bottom of the pan. Bake for 10 minutes.
  4. Prepare the filling by whisking sweetened condensed milk, sour cream, egg yolk, lemon juice, and zest until smooth.
  5. Pour filling over baked crust and sprinkle reserved crumb topping on top. Bake again for 17-20 minutes until golden.
  6. Allow to cool completely in the pan before lifting out and slicing into squares.
