  • 24 ounces fresh green beans
  • 8 ounces baby bella mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup vegetable oil (for frying shallots)
  • 1/2 cup heavy whipping cream
  • 1/2 cup grated parmesan cheese
  • Creole Cajun seasoning
  • Garlic
  • Lemon juice
  • Worcestershire sauce

Instructions

  1. In a skillet over medium heat, heat the vegetable oil and fry thinly sliced shallots until golden brown. Drain on paper towels.
  2. Blanch green beans in boiling water for about 5 minutes until bright green; transfer to an ice bath to cool.
  3. In the same skillet, melt butter and saut mushrooms until tender. Add garlic and cook for a minute.
  4. Stir in flour, then gradually whisk in chicken broth until thickened. Mix in lemon juice, dijon mustard, Worcestershire sauce, thyme, nutmeg, salt, and pepper.
  5. Combine green beans with the mushroom sauce and half of the parmesan in a baking dish. Top with remaining parmesan and fried shallots.
  6. Bake at 350F for about 30 minutes until bubbly.
