  • ¼ cup granulated sugar
  • 2 tsp instant yeast
  • 1 tsp salt
  • ½ cup warm milk
  • ¼ cup warm water
  • 2 large eggs
  • 1 cup unsalted butter (cold)
  • Vegetable oil (for frying)
  • Pastry cream or custard (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the Dough: Combine flour, sugar, yeast, and salt in a bowl. Add warm milk, water, and eggs; knead until smooth. Rest for 30 minutes.
  2. Laminate: Roll out the dough, incorporate cold butter into it, then fold and chill repeatedly for at least 8 hours.
  3. Shape & Proof: Roll out the dough to ½-inch thickness and cut into donut shapes. Let them rise until slightly puffy.
  4. Fry: Heat oil to 350°F (175°C) and fry cronuts until golden brown on both sides.
  5. Fill & Decorate: Pipe in pastry cream and dust with powdered sugar or glaze.
