  • cup almond flour
  • cup honey or maple syrup
  • 2 cups mixed berries (fresh or frozen)
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350F (175C) and grease an 8×8 or 9×9-inch baking dish.
  2. Blend cottage cheese and eggs until smooth and creamy.
  3. In a mixing bowl, combine the blended mixture with almond flour, honey or maple syrup, vanilla extract, lemon zest, and baking powder. Stir well.
