  • 2 bone-in, skin-on chicken thighs
  • 300 g potatoes
  • 8 baby carrots
  • 150 ml heavy cream
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt, pepper, and herbs (thyme or mixed)

Instructions

  1. Boil peeled and chopped potatoes in salted water for 15-18 minutes until tender. Drain and mash with butter and milk; season to taste.
  2. In a skillet, melt butter over medium heat; sauté carrots for 2 minutes. Drizzle with honey and salt, cover, and cook on low for 10-12 minutes.
  3. Season chicken thighs with salt, pepper, and thyme. Sear skin-side down in the skillet with olive oil for about 5-6 minutes. Flip and cook for another 5 minutes.
  4. In the same skillet, sauté garlic until fragrant, then stir in Dijon mustard and heavy cream. Simmer until thickened.
  5. Return chicken to the skillet; coat with sauce and simmer for an additional 5-7 minutes until cooked through.
  6. Serve chicken alongside mashed potatoes and glazed carrots; drizzle extra sauce over the top.
