  • 8 lamb chops
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup heavy cream
  • 1 bunch asparagus, trimmed
  • 1/2 cup red wine
  • 1/2 cup beef broth
  • 1 tbsp butter (for sauce)
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix olive oil, parsley, rosemary, garlic, salt, and pepper in a small bowl.
  3. Rub the herb mixture on both sides of the lamb chops and sear in a hot skillet for 2 minutes on each side.
  4. Roast the lamb in the oven for 6–8 minutes for medium-rare doneness.
  5. Boil cubed potatoes until tender (about 15 minutes), then mash with butter, cream, and salt.
  6. Toss asparagus with olive oil and roast alongside the lamb for about 12–15 minutes until tender.
  7. Serve lamb over mashed potatoes with asparagus on the side.
