  • 12 ounces smoked sausage (sliced)

  • 1 bell pepper (diced)

  • 1 cup long-grain white rice (uncooked)
  • 1 can black beans (drained and rinsed)
  • 2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • teaspoon dried oregano
  • teaspoon chili powder
  • Salt and black pepper to taste
  • cup fresh cilantro (chopped)
  • 1 lime (cut into wedges)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced sausage and cook until browned (about 5 minutes). Stir in diced onion and bell pepper; cook until softened (34 minutes). Add minced garlic until fragrant (30 seconds).
  2. Add spices: cumin, smoked paprika, oregano, and chili powder; mix well.
  3. Stir in uncooked rice, black beans, and chicken broth. Bring to a boil, then reduce heat to low, cover, and cook for about 20 minutes or until rice is tender.
