  • 2/3 cup maple syrup or honey
  • 1/4 cup Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In one bowl, mix pumpkin puree, maple syrup/honey, Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, whisk together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually combine the dry mixture with the wet mixture until just mixed.
  5. Grease a muffin tin or line it with paper liners and fill each cup about two-thirds full with batter.
  6. Bake for 18 minutes or until a toothpick comes out clean.
  7. Allow cooling in the tin for a few minutes before transferring to a wire rack.
