  • 3 skinless chicken breasts (cut into 1-inch chunks)
  • 1/2 cup chicken broth
  • 3 tablespoons orange marmalade
  • 1 cup soy sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 purple onion (cut into 1-inch pieces)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1/2 fresh pineapple (cut into 1-inch pieces)
  • Olive oil

Instructions

  1. In a gallon freezer bag, combine chicken, chicken broth, orange marmalade, soy sauce, ground ginger, and garlic powder. Seal and marinate in the fridge for 2-4 hours.
  2. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 20 minutes.
  3. Assemble skewers by threading marinated chicken and alternating with purple onion, red bell pepper, and pineapple.
  4. Lightly brush the grill with olive oil and place skewers on it. Grill for about 8-10 minutes, turning occasionally until cooked through.
