  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon all-purpose flour
  • 2 cups beef broth
  • 1 3/4 cups Guinness stout
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 2 teaspoons fresh thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides. Remove from pot and set aside.
  2. In the same pot, saut onion and garlic until translucent.
  3. Stir in tomato paste and flour; cook for one minute.
  4. Pour in beef broth and Guinness stout; stir well.
  5. Return beef to the pot along with carrots, potatoes, thyme, salt, and pepper.
  6. Bring to a boil; reduce heat to low and cover. Let simmer for 1.5 to 2 hours until beef is tender.
  7. Adjust seasoning if necessary before serving.
