  • 3 pounds boneless chuck roast
  • 2 large onions
  • 3 cloves garlic
  • 2 cups Guinness beer
  • 2 cups beef broth
  • Carrots
  • Yukon Gold potatoes

Instructions

  1. In a Dutch oven, cook diced bacon until crispy. Remove and set aside.
  2. Season and brown the chuck roast in batches; set aside with bacon.
  3. Saut sliced onions and minced garlic until fragrant.
  4. Stir in flour and tomato paste, then add Guinness while scraping the pot.
  5. Return beef and bacon to the pot, along with broth, Worcestershire sauce, brown sugar, and thyme. Bring to a boil.
  6. Cover and simmer for one hour; then add carrots and potatoes. Cook for an additional hour until tender.
  7. Adjust thickness if necessary by simmering uncovered or adding a slurry of flour.
