  • 2 medium sweet potatoes (peeled and diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or thawed from frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • Spices: smoked paprika, ground cumin, chili powder, salt, and pepper
  • Optional: 1/2 cup shredded cheese for topping

Instructions

  1. Preheat oven to 375F (190C).
  2. In a large skillet, heat olive oil over medium heat. Saut onion and garlic until fragrant (2-3 minutes).
  3. Add ground turkey; cook until browned (5-7 minutes). Season with spices.
  4. Stir in red bell pepper and spinach; cook until tender (2-3 minutes).
  5. Boil diced sweet potatoes in a separate pot until tender (about 10 minutes), then drain.
  6. In a baking dish, layer sweet potatoes followed by the turkey mixture and pour chicken broth over the top.
  7. If desired, top with shredded cheese and bake for 15-20 minutes until hot and bubbly.
