  • 4 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 small onion
  • 2 garlic cloves
  • 1 pound lean ground turkey
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • teaspoon sea salt
  • teaspoon black pepper
  • cup black beans (drained and rinsed)
  • cup canned corn (drained)
  • cup diced tomatoes
  • cup chopped fresh cilantro
  • cup shredded cheese (cheddar or Mexican blend)
  • Plain Greek yogurt or sour cream, for topping (optional)

Instructions

  1. Preheat oven to 400F (200C). Wash and pierce sweet potatoes with a fork.
  2. Bake sweet potatoes on the oven rack for 4550 minutes until fork-tender.
  3. In a skillet, heat olive oil over medium heat. Saut diced onions for about 34 minutes.
  4. Add minced garlic and cook for another 30 seconds. Stir in ground turkey; cook until browned.
  5. Season turkey with smoked paprika, chili powder, cumin, sea salt, and black pepper.
  6. Mix in black beans, corn, and diced tomatoes; simmer for 57 minutes.
  7. Slice baked sweet potatoes open lengthwise; mash some flesh to create space.
  8. Fill each potato with the turkey mixture; top with shredded cheese.
  9. Return to the oven for an additional 5 minutes until cheese melts.
  10. Garnish with cilantro and optional Greek yogurt or sour cream before serving.
