  • 1 can (15 ounces) black beans
  • 1 small onion
  • 2 cloves garlic
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (4 ounces) green chilies
  • 8 medium tortillas
  • 1 can (10 ounces) enchilada sauce
  • 1 cups shredded cheese

Instructions

  1. In a skillet over medium heat, warm olive oil. Saut chopped onion and minced garlic until soft, about 3 minutes.
  2. Add ground turkey and cook until browned. Drain excess fat if needed.
  3. Stir in spices, black beans, diced tomatoes, and green chilies; cook for another 5 minutes.
  4. Preheat oven to 350F (175C). Spread a layer of enchilada sauce in a baking dish.
  5. Fill each tortilla with the turkey mixture, roll tightly, and place seam-side down in the dish.
  6. Pour remaining sauce over enchiladas and top with cheese.
  7. Bake for 20 minutes until cheese is bubbly and golden brown.
