Ingredients

Scale
  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 1/2 small onion (diced)
  • 2 cloves garlic (minced)
  • 3 teaspoons chili powder
  • 1 teaspoon cumin
  • 8 tortillas (flour or corn)
  • 1 cup thinly sliced red onion
  • 2 tablespoons lime juice
  • 1 tablespoon grape juice vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon granulated sugar, honey, or agave

Instructions

  1. To make pickled onions, combine sliced red onion, lime juice, vinegar, salt, and sugar in a bowl. Let sit for 15 minutes.
  2. Heat olive oil in a skillet over medium heat; saut diced onion until soft. Add minced garlic and cook until fragrant.
  3. Add ground beef and cook until no pink remains. Allow the beef to crisp slightly by letting it sit undisturbed for a few minutes.
  4. Mix in seasoning ingredients: chili powder, cumin, lime juice, and sweetener of choice.
  5. Warm tortillas and assemble tacos by filling each with seasoned beef and topping with quick-pickled onions.
