  • 500g lean ground beef
  • 8 flour tortillas
  • 720ml chicken stock
  • 3 tbsp tomato puree
  • 200250g cheddar cheese
  • Fresh toppings: sour cream, diced avocado, chopped tomatoes

Instructions

  1. Prepare the enchilada sauce by heating vegetable oil in a skillet. Whisk in flour until smooth. Gradually add tomato puree and chicken stock while whisking until thickened. Stir in spices and simmer for 10 minutes.
  2. In another skillet, saut red pepper, onion, and garlic until soft. Add ground beef with spices and cook until browned.
  3. Preheat oven to 180C (350F). Spread sauce at the bottom of a baking dish. Fill tortillas with refried beans, beef mixture, and cheese; roll tightly.
  4. Place enchiladas seam-side down in the baking dish, cover with remaining sauce and cheese. Bake covered for 25 minutes, then uncover and bake for an additional 10-15 minutes until bubbly.
