  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 pound lean ground beef
  • 6 ounces fresh baby spinach
  • 10 ounces frozen cauliflower rice (cooked)
  • 1 cup sour cream
  • 8 ounces shredded Italian blend cheese

Instructions

  1. Preheat oven to 375F.
  2. Heat olive oil in a large skillet over medium-high heat. Saut diced onions until translucent, then add minced garlic and cook until fragrant.
  3. Add ground beef; season with Italian seasoning, paprika, salt, and pepper. Cook until browned.
  4. Stir in spinach until wilted. Remove from heat and drain excess liquid.
  5. In another bowl, mix cooked cauliflower rice, sour cream, butter, and basil until creamy.
  6. In a baking dish, layer the cauliflower mixture first, followed by the beef mixture. Top with cheese.
