  • 2 medium zucchinis
  • Olive oil
  • 4 teaspoons Greek seasoning
  • 1/2 cup Newman's Own Classic Oil and Vinegar Dressing
  • 2 cups cherry tomatoes, halved
  • 6 oz can black olives, halved
  • 3/4 cup crumbled feta cheese
  • 1 tablespoon dried Greek oregano

Instructions

  1. Preheat the grill to high heat.
  2. Cut the zucchinis lengthwise into quarters and brush all sides with olive oil.
  3. Season the cut sides with Greek seasoning.
  4. Grill the zucchini cut-side down for about 3-4 minutes; flip and grill the other side for another 3-4 minutes until tender-crisp.
  5. While grilling, whisk together dressing and oregano in a bowl.
  6. Remove zucchini from grill, let cool slightly, then cut into pieces.
  7. In a bowl, combine zucchini with one-third of the dressing; add tomatoes, olives, remaining dressing to taste, and gently fold in feta cheese.
  8. Serve seasoned with black pepper.
