  • 2 yellow squash
  • 1 pint cherry tomatoes
  • 1 bunch fresh baby carrots
  • 3 scallions
  • 1 sprig of fresh rosemary, minced
  • 1/4 cup freshly squeezed lemon juice
  • 1/2 cup Mazola Corn Oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Crumbled feta cheese for topping

Instructions

  1. Preheat the grill to medium-high heat.
  2. Skewer the vegetables tightly onto metal skewers.
  3. Lightly brush the veggies with Mazola Corn Oil.
  4. Grill skewers, turning occasionally until vegetables are tender and charred (about 10 minutes).
  5. In a bowl, whisk together lemon juice, minced rosemary, salt, and pepper for the vinaigrette.
  6. Remove vegetables from skewers and place them in a serving dish. Drizzle with dressing and top with feta cheese.
